Instructions:
Scoop out 2-3 tablespoons of flesh from each avocado half, leaving the rest intact. Blend the scooped-out avocado with sour cream, lemon juice, and 1/4 teaspoon salt until smooth. Heat olive oil in a skillet over medium heat. Sauté the bell peppers and onions for 3 minutes. Add ground beef and cook for 8 minutes, breaking it up with a spoon. Stir in salsa, cumin, chili powder, and the remaining 1/2 teaspoon salt. Cook for 3 more minutes. Mix in cheddar cheese. Stuff the avocado halves with the ground beef mixture. Instructions:
In a large bowl, combine chicken, 2 tablespoons olive oil, lemon zest, lemon juice, chili powder, salt, and pepper. Marinate in the fridge for 20 minutes. Toss shishito peppers, avocados, 1 tablespoon olive oil, and minced garlic in a separate bowl. Prepare the lemon crema by mixing all crema ingredients in a small bowl. Set aside. Preheat the grill to 200°C. Grill the chicken for 5-8 minutes, turning once, or until the internal temperature reaches 73°C. Grill peppers and avocados during the last 3 minutes.
